Sorry for the lack of posting this week! I've been doing a thousand things and not really getting anything finished. Do you ever have weeks like that?
Anyway, I took these two cuties with me this afternoon
to pick up organic produce from my co-op. I was excited to see I got some different stuff this time :)
In this week's batch I received:
- eggplants
- mangos
- zucchini
- oranges
- bananas
- cucumbers
- tomatoes
- raspberries
- avocados
- sweet peppers
- broccoli
- swiss chard
- lettuce
- peaches
- cantaloupe
Anyone have a recipe for swiss chard? I'm also on the hunt for a good eggplant recipe so if you've got one, please send it my way!
Aside from some sewing orders, I have been working on refinishing my dining room set that my parents bought in the 80s. I love the lines of the furniture but that glossy cherry color just doesn't do it for me. Nor those green cushions. So, I'm updating it. Don't have a heart attack, Mom! It's going to turn out super cute and stylish.
Here's the before and I'll have a big post once I finish :)
Tonight I'm going out to Chuy's (yum, Tex Mex!!) for dinner with two girlfriends from grad school. I can't wait!! One has been living in Sweden with her Swedish hubby for a few years and I can't wait to hear all sorts of Euro tales.
I made a swiss chard quiche that turned out really well, especially considering that I had never made a quiche and someone, not saying who, turned up his nose when I brought the chard home. It made him change his tune.
Sorry, I have no idea where I got the recipe, but it was online.

Oh wow - it looks like a GREAT week! I have a recipe for eggplant curry that I've been dying to try (allrecipes.com) but I haven't so I can't say for sure. Or... eggplant parmesan??? YUM!

I just refinished my dining room table and chairs...it turned out much better than I anticipated! I painted the bottom of the table and the bottom and back of the chairs black and distressed them a bit and then stained the top of the table and seats a walnut finish. The hardest part was the sanding, I thought! I love to do stuff like that! I can't wait to see the finished product!

I have a great recipe for eggplant stacks.Very simple...it's eggplant sliced, fresh mozzarella, tomatoes and basil stacked. I'll scan it in later today and will email it to you! Eggplant is also yummy when you slice it, brush it with balsalmic vinegar and olive oil, salt and pepper and grill it or bake it!

Allison, I'd love to see your pictures!
Kristin, grilled eggplant sounds yummy too.
I made this stuffed eggplant recipe for dinner last night and it was sooooo good. Brad and Kate liked it a lot too and I'll definitely make it again.
